Outside the box
IN THE KITCHEN WITH...
To infuse the flavor of spice into a stock or sauce without incorporating the spice into the final dish, chefs use sachet bags made from cheesecloth. If you find yourself out of the material, here's an easy solution from Brian Carson, chef at Republic of Texas Bar and Grill.
"I stopped buying cheesecloth years ago," Carson said. "I use a coffee filter and tie it with a piece of cotton string. It's permeable and it doesn't break. Not everyone has cheesecloth, but everyone has a coffee filter and a piece or string or twine around the house."
QUICK BITE
HONEY NUT CHEX MIX
If you have a hard time keeping your hand out of a bowl of regular Chex Mix, then you're in deep trouble. The honey nut variety is a sweet spin on this snacking favorite. Cereal pieces, nut clusters, pretzels and small shortbread stick-like cookies are laced with honey and sugar. The salt of the pretzels complements the mix's sweetness. Buy two bags, because you may eat one on the way home from the store. Add this snack to your list of addictive treats.
GRAPEVINE
1998 LOS VASCOS CABERNET SAUVIGNON RESERVE
Whether he's having a burger or a good steak, Dr. Kenneth Cook of Radiology Associates will likely opt for this Cabernet. Ruby red in color, this Chilean wine sells for about $15. The Los Vascos web site touts it as being medium/full in body with soft tannins, offering flavors of black cherry, cassis and cedar - as well as a nice long finish.
"It's able to stand up to any meat beef or meat dish that requires a good red wine," Cook said. "And it's inexpensive enough to have with a hamburger."
HAND-WASHING TIPS
Don't forget to wash your hands betweeen switching tasks in the kitchen, such as cutting raw vegetables and raw meat.
Always wash the back and front of your hands up to your wrists, between fingers and underneath your fingernails.
Sing two choruses of "Happy Birthday" as you wash, cleaning your hands for at least 20 seconds.
