Outside the box

IN THE KITCHEN WITH...
   Shasta Roberts, a personal chef and owner of Kitchen Creations, has a foolproof way of getting that coconut cracked for delightful summertime desserts. First, pierce the eyes with a screwdriver and drain the milk. You should have about one-quarter to one-half cup of milk.
   "Then place the coconut in the freezer for about an hour," Roberts said. "Take it out and crack it open with a hammer. Just pull out the flesh. Freezing loosens the flesh from the rest of it.
   "Flake it or grate it and you've got what you need for your cake, pie or whatever your dessert."

   CHOCOLATE CREME OREO SANDWICH COOKIES
   And you though Oreo couldn't go any further than the BIG Stuf or the fudge-covered Oreo. The folks at Oreos have tried to make their famed cookie even more chocolate-y. Chocolate crème Oreos scream out as a sure-fire hit for chocolate lovers, but the cookie disappoints. The chocolate crème doesn't taste much different than the traditional white stuff. One perk: It does seem to contain more crème on there than the average Oreo sandwich cookie.
   GRAPEVINE
   TOASTED HEAD CHARDONNAY 1999 VINTAGE
   The winery's Web site should give you reason enough to uncork a bottle. Described as the "Chardonnay for cool people," Toasted Head Chardonnay 1999 Vintage tastes expensive but isn't, says Robert Wallace, manager of Liquid Town on Everhart Road. The wine sells for about $14 per bottle.
   "This wine is 100 percent barrel-fermented," Wallace said. "So there's a definite oak flavor to it. It's a nice, light Chardonnay. It's a real good value. It's good with poultry or fish, or you could use it to cook with."
   THE CUTTING EDGE
   Trying to choose between acrylic, glass, marble, plastic or a solid wood cutting board? According to the American Dietetic Association, it really doesn't matter. Just follow these guidelines:
   Use two cutting boards: One only for cutting raw meat, poultry and seafood; the other for ready-to-eat foods, like breads and vegetables.
   Wash boards thoroughly in hot, soapy water after each use or place in the dishwasher.
   Discard old cutting boards that have cracks, crevices and excessive knife scars.
