MORE TAKEOUT
Time-pressed Americans continue to seek convenient meal solutions. They're using more home-delivery services and buying more takeout food.
When they do "cook," consumers tend to assemble prepared or partially prepared foods, rather than use raw ingredients exclusively.
So says the latest "Trends in the United States: Consumer Attitudes and the Supermarket, 2001," a survey of 1,000 consumers conducted by the Food Marketing Institute.

A free booklet offers ideas for easy sandwiches, snacks and other dishes including "funny-face" food. The recipes are designed to pique kids' interest while teaching basic health and culinary skills.

RECIPE RULES
Always read a recipe from start to finish before you begin cooking. Assemble and organize all the ingredients and equipment before you start.
BETTER BROCHETTES
When threading cubes of meat or vegetables onto skewers, leave a little space between each item to allow the heat to circulate evenly, preventing a raw spot where two pieces meet. After the brochette is cooked, simply slip the items closer together. To bump up the flavor of brochettes or kebobs, use sprigs of fresh rosemary, savory or mint, or stalks of lemon grass or sugar cane instead of skewers. Soaking wooden skewers in water for 30 minutes before using will keep them from igniting on the grill.
TASTY TOMATOES
Seasoning a tomato will bring out its sweet and pleasant tart flavors. Salting tomatoes draws out their natural juices.
