IN THE KITCHEN WITH....
Mike Esparza, executive chef at Marco's Bistro, says the perfect al dente pasta is in reach. "Bring water to a full boil, drop in the pasta, and constantly keep stirring," he says. "Most pasta just takes 5-7 minutes. When you drain it, don't cool it under water; air cool it so it will last longer. Lightly toss it with a little oil and serve."

Craig Day, chef and owner of Latitude 28 02' in Rockport said this medium body red wine is a great match for meats or seafood. "We tried it as a featured wine one month, and everybody loved it," said Day, as he hurried to order more. "It has a good, peppery taste." The winery's Web site notes, "The extended, cool growing season of 1999 had an intensifying effect on all of our red wine grapes, and the Old Vine Zinfandel was no exception. These conditions created a wine of deep, ruby color and generous, bright fruit aromas."
