Outside the box

Written and compiled by staff writer Leanne Libby

IN THE KITCHEN WITH....
Mike Esparza, executive chef at Marco's Bistro, says the perfect al dente pasta is in reach. "Bring water to a full boil, drop in the pasta, and constantly keep stirring," he says. "Most pasta just takes 5-7 minutes. When you drain it, don't cool it under water; air cool it so it will last longer. Lightly toss it with a little oil and serve."

   QUICK BITE
Taco Bell Home Originals Pour 'N Simmer Taco Seasoning
If you've ever dreamed of having your kitchen smell like a fast food restaurant, this is the sauce for you. Genuine Taco Bell aroma wafted from our stovetop when we simmered with this seasoning. Make healthy feel naughty by using it with ground turkey meat, or go for the full effect with beef. At twice the cost of powder mix, it might not go in your weekly shopping basket, but one jar seasons two pounds of meat and feels a little more like real cooking than ripping open a packet of the powdered stuff.

   GRAPE-VINE
   Bogle 1999 Old Vine Zinfandel
Craig Day, chef and owner of Latitude 28 02' in Rockport said this medium body red wine is a great match for meats or seafood. "We tried it as a featured wine one month, and everybody loved it," said Day, as he hurried to order more. "It has a good, peppery taste." The winery's Web site notes, "The extended, cool growing season of 1999 had an intensifying effect on all of our red wine grapes, and the Old Vine Zinfandel was no exception. These conditions created a wine of deep, ruby color and generous, bright fruit aromas."

   WHEN IN DOUBT...
Don't let your leftovers become lethal weapons. Store them in shallow, tightly sealed containers and date them so you can use them before they grow fur. The American Dietetic Association reminds you to refrigerate leftovers within two hours of serving, one hour if the weather is warm.

       WEB SITE OF THE DAY
       www.twinkiesproject.com
Hark back to 1995 when a group of Rice University students subjected the hapless Twinkie to a variety of scientific experiments, including taking all the air out of them and testing their resistance to electrical currents. You can even read the test results in haiku.
